Starch is the polymer of the basic monomer unit of sugar. In other words, starch is a polysaccharide, which means it is a long chain of sugar units connected to each other. The sugar could be in any monosaccharide form, like glucose, fructose and galactose.

The starch is consist of long chains of glucose units joined by glycosidic bonds called polysaccharide. They are polymeric carbohydrate produced by most green plants for energy storage. It consist of two types of molecules such as linear and helical amylose and a branched amylopectin.
